We’ve chosen quintessential spring flavours; seasonal cherries and pistachios, to bring some life to this chocolate gluten-free fudge. Dark, milk and white chocolate will all work perfectly depending on your taste preference.

What Chocolate Should I Use in Gluten-Free Fudge?

Whether it’s dark, milk or white, fudge is better when combined with chocolate. Chocolate chips and baking melts are suitable, although a chocolate block is best. Melts and chips are made to hold their shape and lack the full cream milk that makes chocolate blocks so delightful.

Semi-sweet chocolate is another word for dark chocolate with a higher cocoa content. It’s a great option for baking and when used in larger quantities and provides the perfect amount of sweetness for mixing with sweetened condensed milk.

How Do I Make Gluten and Dairy-Free Fudge?

Making dairy-free fudge sounds like hard work, but with all the substitutions on the market, it’s easier than ever! Ensure your chocolate choice is free from all dairy products. Additionally, use coconut condensed milk or another vegan alternative to achieve the same results with minimal flavour compromise.

What Can I Add to Fudge?

Fudge is the perfect customisable dessert, as it can be made with almost any toppings or additions. We’ve chosen cherries as they’re a seasonal fruit, and pistachios are great for a little crunch and as a complementary flavour. Add some shredded coconut into the mix for a Cherry Ripe gluten-free dessert.

If you’re not keen on nuts or cherries, there are a wide array of add-ins to choose from. Fudge is ideal as a quick recipe to whip up when guests come around, as it can be made to suit anyone’s taste.  Top with sprinkles or M&Ms, stir through gluten-free salted pretzels and top with marshmallows for a rocky-road fudge or add Baileys Irish Cream Liqueur to the mix for an adults-only gluten-free dessert.

How Do I Store Fudge?

Gluten-free fudge must be kept in an airtight container. Store it at room temperature for up to one week or in the fridge for up to two. You can keep fudge for up to three months by storing it in the freezer. Remove and allow to thaw two to three hours before serving.

  1. Line an 8×8 inch baking pan with parchment paper.
  2. Melt chocolate chips over a double boiler until smooth. Alternatively, microwave in 30-second intervals, stirring in between.
  3. Combine vanilla extract, chopped cherries, and condensed milk with the chocolate mixture.
  4. Pour the mixture into the prepared pan. Smooth out the top if necessary. Place leftover cherries and pistachios on top.
  5. Refrigerate for 4 hours, overnight, or until set.
